Valued at $200,000,000.00, Cambridge developed an award-winning 311,000 square-foot Cuisine Solutions facility at 8339 Sous Vide Way which is the largest Sous Vide food plant in the world.  It has also been recognized as both Food Engineering Magazine’s 2021 Sustainable Plant of the Year and the San Antonio Building Journal’s Best Industrial Project for 2021. The plant was designed and constructed to maximize a positive environmental and social impact.  Cuisine’s LEED-certified processing hub conserves resources and gives back to the community.  Partnering with Big Sun Solar, 300 parking spaces are shaded by solar panel carports, which is the largest solar installation in San Antonio. The panels are owned by community members and put about 900 kWDC of clean and renewable energy back into the power grid and savings into the owners’ pockets.  Locally sourced stone and meticulously planned landscaping offer an elegant architectural feature, aesthetically blending into the surrounding neighborhood above and beyond the typical industrial plant.

A sustainable skid-built ammonia refrigeration system maintains the facility’s temperature-controlled processing and cold storage area. Low-charge ammonia has a global warming potential of 0, making it better for the environment and less likely to be phased out by future government regulation.  Future expansion of the facility of up to 100,000 square feet was factored into the construction, tapping into existing infrastructure and building on compressed earth blocks for easy construction within open spaces in the existing facility.  Cambridge arranged a sale-leaseback with New York-based W. P. Carey.

The Cuisine Solutions Sous Vide facility is situated on the former Brooks City Base in southeast San Antonio.  After decommissioning of the base, the Brooks Development Authority – as a public-private partnership with the City of San Antonio – began redeveloping the 1,308 acre base in 2002 as a mixed-use haven for businesses and residential alike.  Brooks has been designated as an Opportunity Zone, allowing businesses tax incentives to invest in high-poverty communities.  Cambridge has formed a close relationship with Brooks Development Authority and is currently working on additional development sites on the base.
